For many years, Sorensen's Glasshouse & Gardens has been far more than a café. It has been a place where friendships were formed, celebrations were shared, and visitors from around Australia and the world discovered one of the Blue Mountains' most beautiful gardens. Every coffee served, every meal enjoyed, every wedding celebrated and every quiet moment among the trees became part of our story.
Paul Sorensen was born in Copenhagen, Denmark, in 1891 and trained in horticulture before gaining experience throughout Germany, France and Switzerland. Working with some of Europe's finest landscape designers, he developed a lifelong passion for creating gardens that blended naturally with their surroundings.
After arriving in Australia, Sorensen answered an advertisement to design the gardens of the Carrington Hotel in Katoomba. That opportunity introduced him to the Blue Mountains—a place that would become his home and the canvas for much of his life's work.
In 1920 he purchased this property and established his nursery, making use of the natural spring that still flows through the gardens today. Over the following decades he transformed the landscape with winding paths, mature trees, stone walls and tranquil water features, many of which remain today.
Throughout an extraordinary career, Paul Sorensen designed more than one hundred gardens, including the world-renowned Everglades House & Gardens in Leura. His influence continues to shape the beauty and character of the Blue Mountains, ensuring his legacy lives on for future generations.
